Meatless Monday 5 Things: Asparagus

Asparagus, a long, sometimes green stalk vegetable that I just can’t get enough of. It’s one of those vegetables that you either love or hate. I fall in the Love, love, LOVE category and I’m not ashamed of it. Recently, my sweet co-worker and friend brought me a bouquet of purple asparagus that her husband grows right out in their backyard.  Look at it in all its purple glory!
Asparagus| foodlovetog.com

When I tell you my heart exploded!! I was so excited to get my hands on this Indiana grown bunch of goodness. So today, I’m sharing 5 Things about asparagus, and  a quick recipe too.
  1. Asparagus is a stalky vegetable that is typically harvested during the Spring season, but it can be enjoyed all year round.
  2. Did you know that asparagus comes in more than one type/color? Hence my purple bouquet, asparagus can be found in green, white and purple! The green asparagus has color due to the way that the Sun produces chlorophyll and turns plants and veggies green.
  3. Asparagus is rich in Fiber, Folate, Vitamin B-12, amino acids and can be known to help reduce the frequency of headaches.
  4. The thickness of asparagus has no bearing on it’s taste or tenderness.  In fact, the thick spears are pretty tasty and often have a better shelf life than their thinner counterparts.
  5. Growing asparagus is the job for someone with a lot of patience. It typically takes 2-3 years to get a good yield of the vegetable, as the first year is strictly to allow the plant to grown in strong become fruitful.
All in all asparagus is a pretty cool vegetable to put on your plate. Grab a quick recipe for them below.

Meatless Monday: Smoky Baked Macaroni & Cheese

Macaroni and Cheese is one of those dishes that brings out the best or the worst in people. To Kraft or not to Kraft? Baked or Stove top? So many sides to this cheesy coin. Full, drawn-out wars could be fought over it. Okay, maybe not wars, but Mac & Cheese is a staple dish in my home. I make it often. In my family, I’m known for my baked mac & cheese. It’s hand delivered to every holiday gathering and usually made by the TON. Last Thanksgiving, I made 5 pounds. Yes, 5 pounds of ooey, gooey, butter baked mac and cheese.SmokyMac_FLT1
Recently, Mr. Foodlovetog decided to get in the kitchen and try his take on my classic recipe out of the blue. When I tell you I feel like my crown has been threatened… This man’s mac and cheese was perfection! After dinner, we swapped recipes and came up with something fantastic. There’s even a shocker of an ingredient: BBQ sauce, yep! As fate would have it, the woman with condiment issues marries the condiment king. Whenever I make Mac and Cheese, Mr. Foodlovetog puts bbq sauce in it… It’s his favorite way to eat it. Sounds crazy, but when added to the cheese sauce, it kicks the dish up at notch! Grab the recipe below, you’ll be glad you did!

Meatless Monday | Stuffed Peppers

So… I had a few of these hanging out in the kitchen so I decided to stuff them:

20130320-102648.jpg

Veggie Stuffed Pepper Recipe

1 cup uncooked long grain white or brown rice

1 cup water

4 bell peppers

2 (8 ounce) cans tomato sauce

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

salt and pepper to taste

1 teaspoon Italian seasoning

1 medium onion

2 carrot sticks diced

1 can of crushed tomatoes

I also put about a half inch of water in the pan so the peppers wouldn’t stick.

Preheat oven to 350 degrees

1. Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook chopped onion and carrots until soften. Remove from heat and set aside.

2. Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.)

3. In a bowl, mix the cooked rice, onion, carrots, 1 can tomato sauce, crushed tomatoes, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.

4. Bake 1 hour in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender.

Serve hot and enjoy!

Jamaican Jerk Tofu
Recipe from the Meatless Monday website:

http://www.meatlessmonday.com/

Jamaican Jerk Tofu
Makes 6 servings

This is the kind of miracle dish that can convert anyone to tofu. The Jamaican "jerk" seasoning is sure-to-please. It's sort of like barbeque and sort of like curry, savory and sweet at the same time. Just make sure you allow plenty of time for the pressing and marinating. The drier the tofu gets before you put it in the marinade, the better. It will soak up more flavor and be nicely chewy.

Ingredients
1 pound extra firm tofu, drained, sliced and pressed (see directions)
1/2 large sweet onion, roughly chopped
4 cloves garlic
2 tablespoons fresh ginger, grated
Juice of 2 limes
Zest of 1 lime
2 tablespoons soy sauce
2 tablespoons olive oil
3 tablespoons pure maple syrup
1 tablespoon dried thyme
2 teaspoons allspice
1/2 teaspoon cayenne
1 teaspoon nutmeg
1/2 teaspoon cinnamon
2 jalapeno peppers, seeded and chopped (you can cut back to one or omit entirely if you like spicy)

Directions
Slice the tofu into thick slabs then lay the slices on several layers of paper towels or on a clean dish towel and place a heavy plate or skillet on top. Let it sit for an hour or two. Pressing the tofu is a way to get the extra moisture out - and the drier you can get the tofu, the more of the flavorful marinade it can absorb.

Puree all the rest of the ingredients in a blender or food processor to create the marinade. Place the tofu slices in a bowl, pour in the marinade, making sure to coat all the slices, and cover. Let it sit for an hour or two, flipping the slices about halfway through

Heat a skillet with a small amount of olive oil over medium high heat. When the pan is hot, lay the tofu slices in a single layer and saute until crispy and browned. That will take 8-10 minutes on each side.
